Tropical fruit cocktail of: mango, passion fruit, sparkling wine.
- 2 large mangoes
- 6 passion fruit
- sparkling wine
How to prepare:
Peel the mangoes, cut the flesh off the stone, then put the flesh in a food processor or blender. Process until smooth, scraping the mixture down from the sides of the bowl.
Fill an ice cube tray with a good half of the mango puree and freeze for 2 hours until solid.
Cut six wedges from one or two of the passion fruits and scoop the pulp from the rest into the remaining mango puree. Process until well blended.
Spoon the mixture into six stemmed glasses. Divide the mango ice cubes among the glasses, top up with sparkling wine and add the passion fruit wedges.
Serve with stirrers.
