Mexican chicken of: chicken thighs, paprika, lime, pepper, cumin, coriander, garlic, olive oil.
- 4 chicken thighs
- 2 tsp paprika
- 1/2 lime, juiced
- 1 tsp cayenne pepper
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 clove of garlic, finely sliced
- 3 tbsp olive oil
How to prepare:
Preheat the oven to 200°C (180° fan) / 400F / gas 6.
Place the chicken in a foil-lined roasting tin. Whisk the remaining ingredients together and coat the chicken thoroughly.
Roast for about 35 minutes until golden and cooked through.
