Fruit cocktail of: passion fruit, sparkling wine, mangos.
- 6 passion fruit
- sparkling wine
- 2 mangoes
How to prepare:
Peel the mangoes, cut the flesh off the stone, then put the flesh in a food processor or blender. Fill an ice cube tray with a good half of the mango puree and freeze for 2 hours until solid.
Cut six wedges from one or two of the passion fruits and scoop the pulp from the rest into the remaining mango puree.
Spoon the mixture into six stemmed glasses. Divide the mango ice cubes among the glasses, top up with sparkling wine and add the passion fruit wedges.
