Curry chicken sandwich of: chicken breast, yoghurt, salt, pepper, mint, lemon, tomatoes, onion, bread rolls.
- 4 chicken breasts, skinned
- 4 tbsp tikka maşala paste
- 100 ml plain yoghurt
- salt and pepper
- 1/2 lemon, juiced
- 1/2 bunch mint, finely chopped
- 2 tomatoes, thickly sliced
- 1 red onion, peeled and finely sliced
- 2 bread rolls
How to prepare:
Cube the chicken, toss with the curry paste aod leave to marinate in the refrigerator for 30 minutes.
Griddle or fry the chicken in a pan until golden and sizzling and just cookAl through. Squeeze over the lemon juice, season and set aside.
Meanwhile whisk the yoghurt with the seasoning, lemon juice and mint. Slice the rolls in half and spoon the chicken. on top.
Add tomatoes and onion and spoon over the dressing.
