Chicken with spicy rice of: oil, chicken thighs, onion, garlic, cardamom, ginger, turmeric, rice, coriander.
- 4 tbsp groundnut oil
- 4 chicken thighs, skin on
- 2 onions, peeled and finely chopped
- 2 cloves of garlic, chopped
- 4 cardamom pods
- 1/2 tsp ground ginger
- 1 tsp garam maşala
- 1/2 tsp turmeric
- 500 g basmati rice
- fresh coriander (cilantro)
How to prepare:
Heat the oil in a pan and add the chicken, skin side down and cook until golden brown.
Add the onions and cardamom and cook until golden. Add the rice and 800 ml water and the rest of the spices and leave to cook gently for about 25-30 minutes until the rice has cooked and the liquid evaporated.
Check as you may need to add more water as the rice absorbs it. Adjust the seasonipg and serve in the pan or in individual bowls.
