Chicken with prawns

Chicken with prawns of: chicken thighs, oil, oregano, salt, pepper, prawns, chili, garlic.

Ingredients:Chicken with prawns

  • 4 chicken thighs
  • 2 tbsp olive oil
  • 1 tsp dried oregano or rosemary leaves, chopped
  • salt and pepper
  • 320 g spaghetti pasta
  • 225 g raw king prawns
  • pinch dried chilii (chili) flakes
  • 1 clove of garlic, crushed
  • 2 tbsp olive oil

 

How to prepare:

Preheat the oven to 200°C (180° fan) / 400F / gas 6.

Drizzle the chicken thighs with oil, sprinkle with herbs and seasoning and roast in the oven for 25 minutes or until golden and cooked through.

Meanwhile cook the pasta in boiling salted water according to packet instructions. Drain, reserving a little of the pasta cooking water.

While the chicken is resting, heat the oil in a pan with chilii and garlic and add the prawns. Toss and cook for a few minutes until pink, then add the spaghetti and any roasting juices from the chicken.

Toss to coat, then add a splash of pasta cooking water to emulsify the sauce. Serve the pasta and prawns in deep warmed bowls, topped with chicken.
