Ingrediente: 250 g faina 170 g unt 5 oua 40 g zahar pudra sare piper 6 smochine proaspete 18 castane (la vid) 250 g cascaval ras 150 g branza proaspata de capra 300 g smantana 1 varf de cutit de praf de chili 1 varf de cutit de fulgi de ardei &#160; Mod de preparare: Se framanta un aluat din faina, 120 g unt rece, 2 oua, zahar pudra si sare. Se modeleaza o bila de aluat si se infasoara in folie transparenta; se da frigider circa 60 de minute. Apoi se intinde o foaie ddin acest aluat si se asaza intr-o forma de tarta (32 cm). Se introduce din nou in frigider. Se spala smochinele, se sterg si se taie sferturi. Castanele se toaca. Cascavalul se topeste la bain-marie, cu 50 g unt; se paseaza. 		<description><![CDATA[Cea mai cunoscuta sunca cruda italieneasca (numita si prosciutto crudo) provine din zonele rurale din preajma orasului Parma. Ca si serrano din Spania, prosciutto di Parma este o sunca uscata sarata, maturata mai multe luni de zile. Se serveste cruda, taiata in felii subtiri cat foaia de hartie, ca aperitiv. Dupa ce a fost sarat, piciorul de porc este presat periodic, pentru a se elimina umezeala. Aceasta operatiune poate dura doua luni, apoi carnea se atarna in aer liber pentru a continua sa se usuce. Ca si in cazul rudei sale spaniole, uscarea in aer liber incepe in sezonul rece, cand vantul este mai puternic. In momentul in care vremea incepe sa se incalzeasca, sunca se agata intr-o incapere bine aerisita, pentru ca procesul sa continue inca 18 luni. In mod natural, sunca de Parma se potriveste cu fructe dulci si moi, cele doua preferinte clasice ale italienilor fiind pepenele galben (numit melone), cu usoara aroma de mosc sau smochinele coapte (ficchi), cu pulpa lor bogata. 		<description><![CDATA[Termenul foie gras (ficat gras) se refera la ficatul de gasca sau rata indopata. Daca pasarea este indopata, ficatul acesteia isi mareste volumul de cateva ori fata de dimensiunile normale. Ficatul astfel obtinut se vinde sub diferite forme: intreg, crud si conservat, semipreparat sau preparat sub forma de pateu, la bucata, ambalat in vid sau in cutii, uneori impanat cu feliufe de trufe negre. Foie gras d&#8217;oie (ficat de gasca) este mai scump, culoarea sa este mai deschisa si are o consistenta mai cremoasa decat cel de rata. Totusi, multi maestri bucatari prefera sa foloseasca foie gras de canard (ficat de rata), datorita gustului mai puternic. Timp de secole, foie gras a fost consideret o delicatesa definitorie pentru gastronomia clasica frantuzeasca, mai ales atunci cand se consuma ca aperitiv, cu briose simple prajite. In zilele noastre, o mare parte din ficatul de gasca sau de rata care se consuma in Franta provine din import, pe plan national nemaifunctionand decat doua centre de productie importante: langa Strasbourg si in Gasconia, in sud-vest. Ingrediente: 200g miez ras de nuci 2 linguri ghimbir ras cât mai mărunt 4 linguri miere 4 linguri gem de caise 2 linguri stafide 50g curmale uscate 50g smochine uscate 100 g pesmet dulce sau nuci măcinate pentru decorare &#160; Mod de preparare: Treceti prin maşina de carne curmalele, stafidele şi smochinele. în pasta obţinută adăugaţi nucile, gemul, mierea şi ghimbirul. Amestecaţi bine pen­tru omogenizare. Trebuie să obţineţi o pastă mai vârtoasă, eventual suplimentaţi cantitatea de nuci şi ghimbir, dacă este necesar. Ingrediente: 1 farfurie adâncă plină cu smochine (pot fi şi uscate) 800 g zahăr tos (dacă smochinele sunt uscate, numai 600 g) 100 g miez de nucă coaja de la o jumătate de lămâie Mod de preparare: Se pun zahărul, nucile şi coaja de lămâie tăiată în bucăţi mai măricele în cratiţa pentru dulceaţă. Se lasă pe foc până se maroneşte puţin zahărul. Se adaugă o cană cu apă şi se amestecă uşor. Se lasă pe foc până se leagă siropul şi devine ca o miere mai subţire. Scufunzi fiecare smochină în ciocolata topită, doar până la jumătatea fructului, apoi o scoţi şi o pui pe o hârtie la uscat. 		<description><![CDATA[O reteta delicioasa de terina dulce din: smochine, gutui, zahar, stafide, miez de nuca si gelatina granule. Ingrediente: 1 kg smochine proaspete sau usacte 3 gutui 250 g zahar 200 g stafide 150 g miez de nuca 40 g gelatina granule &#160; Mod de preparare: Puneţi 750ml apă într-un vas şi adăugaţi zahărul şi gutuile spălate şi tăiate în sferturi. Pu­neţi vasul la fiert, la foc potrivit, pentru 25 minute. în acest timp, înmuiaţi gelatina într-un pahar cu apă rece. Strecuraţi prin sită gutuile fierte şi adăugaţi în lichidul obţinut gelatina, amestecaţi şi lăsaţi la răcit. Dacă folosiţi smochine uscate, puneţi-le la în­muiat în apă caldă. Dacă folosiţi smochine proaspete, curăţaţi- le de coajă şi tăiaţi-le în două. Tapetaţi cu folie transparentă o tavă de chec. Turnaţi pe fundul tăvii un strat de sirop cu gelati­nă, peste care puneţi un strat de miez de nucă, apoi puneţi iar un strat uniform de gelatină de gu­tui. Ingrediente: 1 l vin rosu 250 g zahar 1 baton de scortisoara 4-5 cuisoare 2 lamai 12 smochine 1 portocala &#160; Mod de preparare: Se storc lamaile. Se dau in clocot vinul cu zahar, scortisoara, cuisoare si suc de lamaie. Se lasă la fiert cca 10 min. Se adaugă smochinele şi se continuă fierberea 10 min., la foc moale. 		<description><![CDATA[O reteta simpla si delicioasa de dulceata din smochine din: smochine, zahar, lamaie si apa rece. Ingrediente: 1 kg smochine 1 kg zahar 1 lamaie 500 ml apa rece &#160; Mod de preparare: Treci smochinele sub jetul de apă rece, apoi le laşi să se zvânte şi le cureţi de codiţe. Cele mai mari le crestezi în patru, la partea unde a fost codiţa. Pui apa cu zahărul să clocotească până începe să se lege, apoi adaugi smochinele şi le laşi să fiarbă la foc domol, 30 de minute, spumând con­tinuu. Adaugi şi jumătate de lămâie feliată subţire şi sucul de la cealaltă jumătate. Mai laşi să fiarbă 15 minute, apoi stingi focul. Dulceaţa fierbinte o torni în borcane (îţi ies cca. 3 borcane de 400 ml), apoi etanşeizezi. Ingrediente: 1 cană de faină 1-1/2 cană de lapte bătut 1/4 cană ulei 1/4 linguriţă sare 1 ou 1 linguriţă praf de copt 1 linguriţă de bicarbonat de sodiu 4 &#8211; 6 felii de brânză mozzarella smochine (proaspete, de preferinţă) felii foarte subţiri de şuncă de Parma sau de jambon &#160; Mod de preparare: Se amesteca toate ingre­dientele în mixer, timp de un minut. Ingrediente: 5-6 smochine 2 linguriţe miere 1 linguriţă oţet balsamic 200 g de prosciutto crudo feliat 20 gde piper măcinat (negru, roşu, verde) 10 g de boia ardei 150 g unt sare &#160; Mod de preparare: Se spală şi se curăţă smochinele de codiţe. Se desfac fiecare în parte, astfel încât să aibă un aspect cât mai decorativ. 2. Se amestecă în blender untul cu piperul, boiaua şi un praf de sare până când se obţine o cremă spumoasă.
